WOW, WHAT A WONDERFUL COUPLE
and what a wonderful menu!!
Here are the recipes!!
Beef Brisket:
3-5 pound brisket
2 large onions
2 packets onion soup mix
1 tablespoon garlic powder or 2 large
garlic cloves
1-2 tablespoons kitchen bouquet
1-2 cups red wine
Preheat oven to 350 degrees
Rub brisket with kitchen bouquet
Sprinkle with garlic
Slice onions and spread over meat
Sprinkle onion soup mix and pour wine
over meat
Cover tight with 3 layers of heavy
aluminum foil. Cook on heavy cookie sheet
or roasting pan in oven for 3-4 hours.
Take out and let rest. Pour off
juices and onions (put aside and save in refrigerator). Cover brisket again with foil and put in
refrigerator. The next day, remove from
refrigerator, cut off fat and thinly slice.
Leave at room temperature 3 hours.
Heat juices and pour over meat.
Yummmmm!!!
Cantaloupe Salad:
Sliced cantaloupe
Grape tomatoes, sliced in half
Watercress or arugula
Toss in salad dressing
Top with grated parmesan
Salad Dressing:
6 Tablespoons olive oil
1 Tablespoon balsamic vinegar
1 Tablespoon red wine vinegar or
2 tablespoons champagne vinegar
1 Tablespoon Dijon mustard
6 shakes of tobacco sauce
1 shallot, finely chopped
¼ cup parsley, chopped
1 clove of chopped garlic
Salt and Pepper to taste.
